Biography

Agroindustrial Engineer from the University of Tolima (Colombia), with a Master's degree in Food Science from the University of São Paulo (Brazil) and a Ph.D. in Chemical Science and Technology from the University of the Balearic Islands (Spain). Researcher at the BIOECONO group of the University of Tolima. His research areas include food, valorization of agri-food waste, encapsulation, biomaterials, starches, and bioactive compounds.
